The Union Rooms is back, but not as we know it. Re-launching on November 23, the former Wethersoon’s has had a multi-million pound facelift by new owner Cyclone Leisure Group.
In addition to this one of the region’s most accomplished mixologists has been brought on board bringing with him a menu of new and exotic cocktail creations.
Chris Fumoleau will head a 25-strong bar team, having learned his trade at multiple high-end hotels and restaurants, such as Café 21, The Vermont Hotel, The Launderette and Alvino’s.
He said: “My aim is to bring customers cocktails that so far haven’t been seen outside cities such as Manchester, Edinburgh and London and including ingredients they have probably never heard of.
“We’ll be using butterfly pea flowers, for example, to create drinks that change colour and we will even be making our own soda water – a closely guarded recipe – that also changes colour.”
The cocktail menu will also expand the current trend for elaborate tiki bar-themed drinks, such as rum-based mixed drinks such as the mai tai and zombie cocktail.
Stuart Young, Managing Director of Cyclone Leisure Group, said: “Although our bars will be fully stocked with everything from wines and spirits to real ales, lagers and soft drinks, cocktails are increasingly a big part of a night out. We are delighted to welcome Chris to the team.”
